Fried Green Tomatoes


Fried Green Tomatoes are a southern treat. Early Forida settlers enjoyed fried green tomatoes with their catfish dinners. While we are used to eating ripe red tomatoes in salads and on our hamburgers, wait till you taste the mouth-watering treats.

6 green tomatoes, sliced 1/4-inch thick
salt and pepper to taste
flour for dusting
2 eggs, beaten
cornmeal
bacon grease or vegetable oil

Salt and pepper each tomato slice on both sides. Dust lightly with flour. Dip slices in beaten egg, letting excess drip off, then coat well with cornmeal. Fry in hot grease or oil until browned, turning gently (about 3 minutes on each side).
Keep warm in a low 200° to 250° oven. Serve hot and enjoy!
